The Dordogne area is famous for its walnuts. At our home, a former walnut farm, we eat walnuts almost every day and we use them to make oil, bread, alcohol and of course, cakes!

Generally, the walnut cake is very rich and heavy with a lot of butter, sugar, and honey. Instead, I would like to share a butterless, very simple, fast and light walnut cake recipe.

Ingrédients pour 6 personnes :

Ingredients for 6 persons:

  • 1 verre de farine – 200 gr – 1 cup of flour – 0.5 lb
  • 1 pincée de sel – 1 pinch of salt
  • 1 verre de crème fraîche – 200 gr – 1 cup of heavy cream – 0.5 lb
  • 2 œufs – 2 eggs
  • ¾ verre de sucre – 150 gr – ¾ cup of sugar – 0.3 lb
  • 1 sachet de levure chimique – 15 gr – 1 packet of baking powder – 1 tablespoon (0.5 oz)
  • 1 bol de cerneaux de noix – environ 100 gr – 1 bowl of walnut kernels, about 2 cups – o.2 lb

Light French Walnut Cake Recipe

Préchauffez le four à 180°C et beurrez un moule rond de 24 cm

Preheat the oven to 350°F and butter a 9″ baking dish.

Concassez les cerneaux avec un couteau. Conservez quelques les plus beaux cerneaux entiers pour la décoration.

Crush the walnut kernels with a knife. Keep the prettiest whole kernels for decoration.

Battez les œufs et le sucre dans un saladier jusqu’à ce que le mélange blanchisse (2-3minutes), rajouter la crème fraîche.

Beat the eggs and sugar in a large bowl until the mix becomes light (2-3 minutes), add the crème fraîche/heavy cream.

Ajoutez la farine, le sel et la levure ensemble et mélangez bien. Ensuite, ajoutez les noix.

Add flour, salt and baking powder, heavy cream together and mix until well combined. Then, add the walnuts.

Versez l’appareil dans le moule beurré. Mettez au four pendant 35 à 40 minutes, jusqu’à ce que le gâteau soit d’un joli brun clair.

Pour the mix (l’appareil is a fancy but common French cooking term for mix) into the prepared baking dish. Bake 35 to 40 minutes until the cake reaches a nice light brown color.

Plantez la pointe d’un couteau au centre du gâteau. Si elle ressort sèche, le gâteau est cuit.

Insert the point of a knife into the center of the cake. If it comes out clean, the cake is ready.

Décorez avec les noix comme vous le désirez.

Decorate with the nuts as you wish.
