3 – Preparing the Canard Γ L’Orange Caramel Sauce
Elle me demande :
I am lucky to have my student Jonelle as an assistant. She asks me:
– what can I do to help you?
I reply:
– If you want, you can squeeze the juice of 2 oranges and half of a lemon and keep 2 or 3 tablespoons aside to dissolve the cornstarch in.
Jβaime Γ§a !
I pre-heat the oven at 200 Β°C (400 Β° F) and while the oven is heating up, I am going to make a caramel. Itβs very easy to make a caramel, you just need to put the sugar in the pan on medium heat and wait! The secret to getting your caramel right is to do nothing! I like that! You can move the pan around using the handle but you must not try to mix it with a spoon.
Jonelle est Γ©tonnΓ©e de la simplicitΓ© :
– Waouh, cβest gΓ©nial ! Moi, je le rate toujours !
Jonelle is surprised how easy it is:
– Wow, thatβs amazing! I always go wrong doing it!
Now that the caramel is blond color (dark but not burnt), you can add the juice… (Be careful, it will splash because of the big difference in temperature!) and re-heat the whole thing.
VoilΓ ! Ta sauce est prΓͺte !
When the caramel is completely mixed with the juice, add the diluted cornstarch gradually and mix with a wooden spoon until the sauce thickens. It must look like a syrup. Here, your sauce is ready!

4 – Preparing the Breast of Duck
Now we will take care of the duck breasts: you must heat a skillet on very high without any fat, meanwhile, make a few incisions in the skin. When the skillet is very hot, just put in the breasts skin side for 2 minutes, then flip them flesh side for 30 seconds and turn off the heat.

Then put the breasts in this dish that goes is oven-proof, skin on top. Salt, pepper. And now put in the hot oven for about 12 minutes. Thatβs the part you can do at the last minute when you have guests!
Oh yes, and not forget to warm up the sauce!!

After that, you can dress up nice plates with the duck cut in small slices with some sauce and a few slices of orange. Typically, I combine this dish with some βgratin dauphinoisβ or some carrots βΓ la Vichyβ, both of which can be prepared in the afternoon! ????
– You’ll see, it tastes delicious.
– And so quick and easy! Jonelle answers
Bon appΓ©tit !
