Aujourd’hui, notre invitée Jacqueline, étudiante en immersion de français de French Today, a demandé à faire de la cuisine avec moi aujourd’hui. Eh oui, pourquoi pas ? Nous sommes vendredi, et mon mari Peter n’est pas là le vendredi après-midi. Généralement, il considère que la cuisine, c’est son espace à lui. Mais nous pouvons profiter de son absence !

Today our guest and French Today French immersion student Jacqueline, asked to do some cooking with me. Yes, why not? It’s Friday and my husband Peter is not there on Friday afternoon. Generally, he considers that the kitchen is his kitchen. But we can take advantage of his absence.

1 – French Apéro Vocabulary

  1. un apéro dînatoire (more slang), un apéritif dînatoire – cocktail buffet supper

2 – What Should I Cook?

La prochaine question, c’est que faire ? Quelle recette choisir ? Aujourd’hui, on déjeune au restaurant, donc il n’est pas question de préparer un grand repas pour ce soir. Préparer quelque chose pour demain, peut-être ? Non, cette idée ne marche pas – demain Jacqueline va partir faire du vélo toute la journée, et elle va prendre un pique-nique avec elle. Puis le soir, nous allons ensemble à un concert de la chorale de Peter. Après-demain, Jacqueline va nous quitter. Elle va partir tout de suite après le petit déjeuner. Pas question de préparer quelque chose que Jacqueline ne va pas pouvoir manger elle-même, bien sûr.

The next question is what to do, what recipe to choose? Today we’ll have lunch at the restaurant, so there is no question of preparing a big meal for tonight. Maybe prepare something for tomorrow ? No, that idea does not work – tomorrow Jacqueline is going cycling all day, and she is going to take a picnic with her. Then in the evening we will go together to a concert by Peter’s choir. The day after tomorrow, Jacqueline will leave us. She will leave immediately after breakfast. There’s no question of preparing something that Jacqueline is not going to be able to eat herself.

3 – What is “Un Apéro Dînatoire” in French?

Ah, ça y est, j’ai une idée ! Si on faisait plusieurs petites recettes simples – on va faire ‘un apéro dînatoire’ pour ce soir. Un apéritif dînatoire, c’est informel. C’est assez léger, et ça remplace le dîner.

Ah, that’s it ! I have an idea ! What if we made a collection of small, simple recipes? – we will make a cocktail buffet supper for tonight. A cocktail buffet is informal. It is quite light, and it replaces dinner.

Je choisis trois recettes : des palmiers au jambon, des toasts raclette, et des mini-soufflés. Je vérifie que nous avons tous les ingrédients dans la cuisine. J’imprime les recettes, et nous les lisons ensemble.


I choose three recipes: ‘palmiers’ with ham, ‘raclette’ toast, and mini soufflés. I check that we have all the ingredients in the kitchen. I print the recipes, and we read them together.

4 – Getting Ready for the Apéro

Puis, au travail ! Jacqueline commence à faire les palmiers. Sur une pâte feuilletée, elle met des tranches de jambon, puis un peu de crème fraîche et de moutarde, et enfin du fromage râpé. Elle enroule la moitié de la pâte jusqu’au milieu, puis elle tourne la pâte de 180˚ et elle enroule la deuxième moitié. Ensuite elle met la pâte dans le congélateur pendant 30 minutes avant de couper des tranches – des palmiers.

Then, to work ! Jacqueline begins to palmiers. On a piece of pastry she placed slices of ham, then a little cream and mustard, and finally the grated cheese. She rolls half of the pastry towards the middle, then she rotates the pastry 180˚ and it rolls the second half. Then she put the pastry log in the freezer for 30 minutes before cutting slices – palmiers.

Pendant ce temps, moi, je prépare les soufflés. Dans un moule à tartelettes en silicone, je mets quatre sortes de garniture : du saumon fumé, du chorizo, des lardons, et des oignons dorés au beurre (enfin, la recette dit ‘dorés au beurre’ – dommage que je les brûle un peu !) Puis je recouvre la garniture d’œufs battus avec un peu de lait.

Meanwhile, I prepare the soufflés. In a silicone mini-tart mold, I put four kinds of filling: smoked salmon, chorizo, bacon, golden onions cooked in butter (well, the recipe says ‘golden ‘ – a pity I burned them a little !) Then I cover the filling with eggs beaten with a little milk.Jacqueline begins the third recipe, ‘raclette’ toast. The ingredients are almost the same as for the palmiers, except for the substitution of stale bread for the pastry.

Le temps passe vite ! Peter va rentrer à 20h. Il est temps de préchauffer le four, puis de faire cuire nos préparations. Nous surveillons la cuisson, mais en même temps, Jacqueline me montre sur une carte l’itinéraire de son parcours à vélo demain.

Time passes quickly ! Peter will return home at 8pm.. It is time to preheat the oven and cook our preparations. We monitor the cooking, but at the same time, Jacqueline shows me on a map the route of her cycle trip tomorrow.


5 – Perfect Timing for the French Apéro

Nous sommes en train de sortir nos gâteaux salés du four quand Peter rentre. Quel timing ! On sort la bouteille de mousseux du frigo – et la soirée apéro dînatoire peut commencer !

We are in the process of getting our appetizers out of the oven when Peter returns. What timing!
Voilà – the buffet supper evening can begin!
