Here is a small sample from my intermediate level English/French audio book (on sale now) “Une Semaine à Paris, a traveler’s guide with a novel twist”. Thomas and Angéla are shopping for cheese in a Parisian boutique, and “le fromager” tells them a bit about the different French fromages...

La première distinction à faire, c’est le lait. Vous avez des fromages de vache, comme le Brie et le Cantal ; de chèvre, comme le Crottin de Chavignol ; et plus rarement, de brebis : le Roquefort est le plus connu, mais pas le seul...

Puis vous avez l'âge. Il y a des fromages frais, qui se mangent tout de suite, et se gardent souvent au frigidaire, et puis des fromages affinés, qui ont vieilli dans des caves pendant des années.

Il y aussi différent type de pâtes : le Brie de Meaux a une pâte molle à croûte fleurie, le Maroilles une pâte molle à croûte lavée, l’Emmental une pâte pressée cuite. Vous avez aussi des fromages à croûte persillée comme la Fourme d’Ambert, ou à croûte cendrée comme le Saint-Claude.

English Translation

The first distinction to make is the milk. You have cow milk cheeses, like Brie and Cantal; goat milk cheeses, like Crottin de Chavignol; and more rare, sheep milk cheeses; Roquefort is the best known, but not the only one.

Then, you should consider the age. There are the fresh cheeses, that you should eat right away, and keep in the fridge, then, you have the cured cheeses, which have ripened in cellars for years.

There are also different types of consistency; Brie has a soft consistency with a flowery crust, Maroilles has a soft consistency with a washed crust, Emmental is a pressed cooked consistency. You also have cheeses with an herbed crust, like Fourne d’Ambert, or ashed crust, like St-Claude.
